Stuffed Pork Chops

1 to 1 1/2 hours Pre-heat oven to 350 large roaster
6 -8 thick pork chops
1 package Stove Top Stuffing
1/2 cup celery
1 small onion
2 Tbl butter

If chops have not had pocket cut into them at the meat market, make a slit deep into the chop from the outer edge to near the bone with a sharp knife. In a pan over low heat, fry celery & onions in butter until almost tender. Add water and spices from Stove Top dressing mix and continue cooking according to directions on package (eliminate butter) Cool. Fill pockets of chops with cooled dressing. Place in roaster ( no need to brown) add approximately 1/2 cup water to bottom. Cover and roast for 1 to 1-1/2 hours at 350 degrees oven. Uncover, turn chops and let brown a few minutes. * Close pockets of chops with toothpicks or meat skewers and salt and pepper both sides.
