Dad s Delicious Eggplant

1 firm eggplant
water salted
2 eggs
1/3 cup milk
15 - 20 saltine crackers crushed

Peel eggplant & slice very thin. Let soak in salt water for 1/2 hour. Beat eggs, add milk. Crush saltines for crumbs. Dip sliced eggplant into egg mixture, roll in cracker crumbs. Fry in slightly greased pan until tender and crisp on both sides. Serve at once
