Scalloped Eggplant

30 minutes Pre-heat oven to 350
1 medium eggplant
3 Tbl butter
4 Tbl flour
3 medium tomatoes fresh, chopped
1 medium Green Peppers
1 medium onion chopped
1 tsp salt
1 Tbl brown sugar
Mozzarella cheese sliced

Pare eggplant or zucchini, cut in cubes, and cook in boiling salt water for 6 minutes. Drain. Melt butter in saucepan, add flour, blend. Add tomatoes, pepper, onion, salt and brown sugar. Cook 5 minutes, stirring. Place drained eggplant or zucchini in greased baking dish,. Top with vegetable mixture. Layer cheese on top, dot with butter. Bake at 350 degrees for 30 minutes or until brown and bubbly.
