Stuffed Peppers

35 minutes Pre-heat oven to 350 baking dish
bread crumbs enough to fill peppers
celery hearts & leaves chopped
parsley fresh, chopped
several scallions chopped
1 - 1 1/2 jars capers
2 Tbl vinegar
garlic salt
oregano
salt & pepper
Olive Oil
3 medium Green Peppers

Cut peppers in half, stem to stern. Clean thoroughly. Moisten enough bread crumbs slightly with water. Judge amount of bread crumbs according to the amount of room in pepper halves. Mix all ingredients except peppers. The spices are measured by filling the small cup of your hand. Stuff the mixture into peppers. Pack firmly. Place in baking dish, add small amount of water in bottom of dish. Bake uncovered at 350 degrees for 35 minutes.
