Dragon Chili

3/4 lb hot Italian sausage
2 1/4 lbs beef stew meat
1 lg onion chopped
1 clove garlic minced
2 lg Green Peppers sliced
2 tomatoes peeled and diced
2 banana peppers diced
2 hot red peppers chopped
2 cans tomato sauce 56 oz. Total
7 ozs beer
12 oz bottle Louisiana Hot Sauce
1 Tbsp basil
3/4 Tbsp salt
1 Tbsp crushed red pepper
1 Tbsp chili powder
1/2 Tbsp cumin ground
1 tsp cayenne
2 bay leaves
2 lemon slices
4 ozs cheese grated

Brown meat. Add onion, garlic, green peppers. Add tomatoes, hot peppers, tomato sauce, beer, hot sauce. Stir in seasoning. Cook on low 1½ hours. Add lemon slices, bay leaves, cheese. Simmer until ready to serve. Remove lemon slices and bay leaves before serving. Makes one gallon.
