Sweet and Sour Chicken

20 oz can pineapple tidbits drained, reserve juice
1 1/2 cups ketchup
1 Tbsp brown sugar packed
1 Tbsp cider vinegar
4 medium size carrots thinly sliced
1/2 Green Pepper cut in chunks (opt)
4 chicken breasts cut in bite size pieces
2 Tbsp vegetable oil

Cook pineapple juice, ketchup, brown sugar and vinegar in saucepan for about 5 minutes. Add carrots, pineapple and green pepper. Remove from heat. Brown chicken pieces in oil until golden. Add pineapple mixture. Heat thoroughly. Serve over cooked white rice.
