Melt butter. Add onions and sauté until tender. Whisk in flour; add bay leaf, stir in broth, vermouth, pepper
and thyme, bring to a boil. Reduce heat and simmer, uncovered, for 20 minutes. Remove bay leaf. In soup
bowls, place croutons and torn pieces of cheese. Pour in onion mixture and serve hot.
For French Onion soup, use oven-safe soup bowls: add croutons and soup mixture...place cheese on top &
bake until warmed. Serve immediately.
