Fluffy Tapioca Pudding

3 Tbsp Minute Tapioca
3 Tbsp sugar
1 egg yolk
2 tsp sugar
1/8 tsp salt
2 cups milk
1 egg white
3/4 tsp vanilla

Mix tapioca, salt, 3 Tbsp sugar, milk and yolk in a saucepan. let stand 5 minutes. Beat egg whites until foamy, gradually beat in 2 tsp sugar, beating to soft peak. Set aside. cook tapioca mixture to a full boil stirring constantly for 6-8 minutes. Gradually add to beaten whites stirring quickly just until blended. Stir in vanilla. Cool or serve warm
