Pickled Beets

1/2 bushel beets scrubbed and trimmed
8 cups vinegar
8 cups water or use juice from cooking beets
6 cups sugar
3 1/2 Tbl salt
4 tsp celery salt
4 Tbl mustard seed
pepper
36 cloves whole
8 small onions sliced
food coloring

Boil beets until completely cooked, rub off skins and slice or dice. Mix remaining ingredients and bring to a boil for 3 minutes. Can. This did 12 quarts about 1/2 full of beets and finished with juice from boiling.
