Wilted Greens with Ricotta Salata

2 bunches Chard or Kale or mix
3 Tbl Olive Oil
1 large onion chopped
4 cloves garlic minced
1/2 cup chicken broth
2 Tbl soy sauce
1/4 tsp pepper
3 oz ricotta salata cheese chunked

Wash greens, do not dry. Trim stems and chop leaves. Warm oil in skillet add onions and saute 4 minutes, garlic and saute 4 minutes more. Add greens, toss, add chicken broth, soy sauce and pepper. Cook tossing until greens are wilted and tender about 7 to 10 minutes. Serve topped with ricotta salata cheese.
