Cacio e Pepe

1 lb pasta strand works best
2 qts water
2 tsp salt
3 ounce romano cheese finely grated
1 1/2 tsp pepper finely ground
1 1/2 tsp Olive Oil

Place grated cheese in a medium bowl and set aside. Boil pasta in water and salt. Drain reserving, 1 cup of the pasta water. Return pasta to pot, pour pasta water over cheese and whisk until smooth, whisk in pepper and oil. Pour sauce over pasta in two pours, tossing after each. Serve immediately with coarsly grated romano to pass.
