Ciabatta Bread

1/4 tsp Yeast
220 ml water warm
240 g bread flour
320 ml water hot
60 ml milk
1 tsp Yeast
2 Tbl Olive Oil
480 g bread flour
1 Tbl kosher salt

Form Biga Dissolve 1/4 tsp yeast in 220 mil warm water, add 240g flour and mix well for 8 minutes. Cover and let sit over night. Mix remaining water and milk and sprinkle with remaining yeast, allow to dissolve. Pour mixture into biga, add remaining flour and oil, mix with dough hook until combined, add salt and knead 4 to 8 minutes. Oil bowl and dough and allow to rise 1.5 hours. Form into 2 to 4 loaves using a lot of flour, dough is soft and sticky, place on parchment paper. Allow to rise another 1.5 hours. 45 minutes before baking, preheat oven with baking stone to 425 degrees. Slide loaves parchment and all onto stone bake 20 minutes at 425 degrees
