Chocolate Pie

15 minutes Pre-heat oven to 375 9 inch pie shell
3/4 cup sugar
1/3 cup cornstarch
2 squares unsweetened chocolate
3 egg yolks beaten
1/2 tsp vanilla
1/2 tsp salt
2 1/2 cups milk
1 9 inch baked pie shell
3 egg whites
1/2 cup sugar

In heavy pan, combine sugar, cornstarch, chocolate and salt. Mix well. Gradually stir in milk. Cook over low heat until mixture is thick, about 10 minutes. Stir very often. Gradually stir half of the hot mixture into beaten eggs. Return to rest of mixture, cook approximately 1 minute more. Remove from heat, add vanilla. Pour into pie shell. Beat egg whites until foamy, gradually add an additional 1/2 cup of sugar, and beat until stiff. Spread meringue and seal to crust. Brown in 375 degree oven for 15 minutes or until golden brown. This recipe can be cooked in microwave oven, cook filling about 5 minutes. Stir, turn, cook 3 minutes more or until thick. Pour into pie shell, then brown in conventional oven.
