Chinese BBQ Pork

4 lb pork boneless in strips
1/2 cup sugar
1/2 cup soy sauce
6 Tbl hosin sauce
1/4 cup sherry
1/4 tsp white pepper
1 tsp five spice powder
1 Tbl sesame oil
2 Tbl ginger grated
2 cloves garlic pressed
1/4 cup ketchup 3/4 if making sauce
1/3 cup honey 1 cup if making sauce

Poke pork with fork several times per strip. Mix together all ingredients except catsup and honey, reserve 1/2 cup for sauce and use the rest a marinade in a zip top bag. Marinate pork 30 minutes to 4 hours. To make sauce combine remaining marinade with catsup and honey and bring to a boil. If you are just making sauce use 3/4 cup catsup and 1 cup honey with all the marinade mix. Boil for 6 minutes once bubbles start stacking up on each other. Set aside to cool. Place marinated pork on wire rack set in a half sheet pan lined with aluminum foil. Pour 1/4 cup water into pan. Cover tightly with foil and bake 20 minutes at 300 degrees. Uncover and cook until edges of pork begin to brown 40 to 45 minutes. Broil until evenly carmelized 7 to 9 minutes, brush with sauce, broil 3 to 5 min longer, repeat with other side. Allow to cool 10 minutes before devouring
