BBQ Brisket

1 brisket
100 grams brown sugar
20 grams half sharp paprika
10 grams onion powder
5 grams allspice
1/2 chipotale chili

Set out brisket to bring to room temp 30 minutes. Preheat grill and clean. Soak hickory chips in water. Combine all ingredients except brisket into rub. Cut the fat cap in a diamond pattern and cover generously with rub. Sprinkle with salt and pepper. Put wood chips on one burner of grill and turn off others. Place a foil shield between brisket and hot burner. Smoke brisket 3 hours, do not open if possible. When brisket is above 140 degrees place in a roasting pan and roast at 325 degrees until it is 195. Let rest 30 minutes and slice thinly. Cover with Buskirk Barbeque Sauce
