Curried Lentils

2 Tbl Niter Kebbeh see Doro Wat
1 med onion chopped fine
2 cloves garlic minced
1 can tomatoes diced
1 quart chicken broth
1 lb chicken cooked and shredded
1 cup lentils
1 Tbl berbere
salt & pepper

Preheat oven to 375 degrees. Melt Niter Kibbeh over med-high heat in an oven-proof dutch oven. Saute onion and garlic until fragrant, add lentils, sprinkle with salt and pepper and saute 1 - 2 minutes. Add tomatoes, Chicken broth, and Chicken, sprinkle with salt and pepper. Stir in Berbere and check for seasoning. Cover pot and bake until lentils are tender and most of the liquid is absorbed about 1.5 hours. Stir occasionally to make sure nothing sticks and burns. Serve with flat bread or bread wraps.
