Potato and Leek Soup

Leeks
Sliced thin and washed

Potatoes
peeled and cubed

thyme
salt & pepper

chicken broth
water
to cover

heavy whipping cream
Melt butter and sweat leeks until tender ~ 10 minutes. Add potatoes, thyme and salt and pepper and toss
together. Pour in chicken broth and enough water to cover potatoes. Bring to boil and simmer 20 minutes or
until the potatoes are soft enough to mash. Mash to desired consistancy with potato masher, add cream and
more salt and pepper to taste.
