Chickpeas with Spinach

1 Tbl Olive Oil
1 1/2 cup onions chopped
1 tsp ginger fresh, minced
2 cloves garlic minced
1/2 cup tomatoes crushed
2 cups Spinach chopped
1 tsp chili powder
1 tsp salt
1 can garbanzo beans
1 Tbl lemon juice
1 cup rice cooked, hot
lemon wedges

Heat skillet and add oil. Saute onion, garlic and ginger until onion begins to brown. Add tomatoes and cook 2 minutes until the liquid evaporates. Add spinach, chili powder, salt and chickpeas. Reduce heat and cook covered until spinach begins to wilt and chickpeas are heated through. Stir in lemon juice and serve over hot rice. Garnish with lemon wedges.
