Chunky Chicken Vegetable Soup

Large Sauce Pan
1/2 lb chicken breast cubed
1 tsp vegetable oil
1 can chicken broth
1 1/2 cups water
2 cups assorted vegetables lima beans, carrots, broccoli what ever you pref
1 envelope Italian salad dressing mix
1/2 cup minute rice uncooked
2 Tbl parsley

Cook and stir chicken in hot oil in large sauce pan until browned. Add broth, water, vegetables and salad dressing mix. Bring to a boil - reduce heat and simmer until vegetables are cooked, about 10 minutes. Stir in rice and parsley, remove from heat and let stand another 10 minutes.
