Honey-Mustard Pork Scallopini

4 pork chops boneless
1/4 cup honey
1/4 cup spicy brown mustard
1 sleeve Ritz crackers finely crushed
1 Tbl butter
1 Tbl vegetable oil

Flatten pork to 1/8 inch thickness. Combine honey and mustard and reserve half of it to be used as a dipping sauce when meal is served. Brush remainder of honey-mustard on pork. Coat pork with cracker crumbs. In a skillet, heat oil and butter. Fry pork for 2-3 minutes on each side or until crisp and juices run clear. Serve with honey-mustard dipping sauce.
