Shortcake Sponge Cake

25 to 30 Minutes 350 9 inch Round or Dbl Rec
1 cup flour
1 tsp baking powder
1/4 tsp salt
2 Tbl butter
1/2 cup milk hot
2 eggs
1 cup sugar
1 tsp vanilla

Mix together dry ingredients and set aside. Add butter to milk and heat. Beat eggs until lemon-colored, 3 minutes on high speed. Then begin to add sugar beating constantly at medium speed for 4 to 5 minutes. Quickly add dry ingredients to egg mixture. Stir just until blended. Stir in hot milk mixture and vanilla, blend well. Pour into paper lined 9 inch round (doubled recipe makes a deep large cookie sheet full) Bake at 350 25 to 30 minutes. Cookie sheet size takes 20 minutes.
