Gypsy Soup

2 tomatoes
2 Tbl olive oil
2 cups onions chopped
3 cloves garlic crushed
1 stalk celery minced
2 cups sweet potatoes peeled and diced
1 tsp salt
2 tsp paprika MILD
1 tsp turmeric
1 tsp basil
dash cinnamon
dash cayenne
1 bay leaf
3 cups water
1 green pepper diced
1 1/2 cups garbanzo beans cooked

Blanch and peel tomatoes. Discard seeds and chop remaining pulp. Heat olive oil in large pot, add onion, garlic, celery and sweet potato. Sauté over medium heat for 5 minutes, add salt and sauté 5 minutes more. Add seasonings and water, cover and simmer 15 minutes. Add tomato, pepper, and chick peas. Cover and simmer 10 minutes, or until all vegetables are desired tenderness. Taste to adjust seasonings and serve.
