Salad (Potato )

Potato and green beans with sherry vinaigrette

12 ounces red potatoes boiled and cubed
1/2 cup scallions sliced
1/2 cup parsley chopped
4 1/2 cups green beans cooked
Dressing
1/4 cup Olive Oil extra virgin
3 Tbl sherry vinegar
1 clove garlic minced
1/2 tsp salt
1/8 tsp pepper ground

Dressing Whisk together in small sauce pan, olive oil, sherry vinegar, garlic, salt and pepper. Heat, stirring until warm. Pour over potatoes, scallions and green beans.
