Side Dish (Potato )

Winter Greens and Potato Casserole

350 degrees 13x9 pan 8 Servings
8 cups water
12 cups kale stems removed & chopped
12 cups mustard greens stems removed & chopped
6 cups red potatoes sliced
cooking spray
2 cups onions vertically sliced
3/4 tsp salt
1 cup provolone shredded
1/2 cup vegetable broth

Bring water to a boil in a Dutch oven, add kale and mustard greens, cook five minutes on until tender, stirring occasionally. Drain and set aside. Spray casserole with cooking spray. Layer 1/3 of the potato slices, 1/2 of the onions, 1/3 of the salt, 1/2 of the greens 1/2 of the cheese, repeat, hold the cheese. Top with remaining potatoes and 1/2 cup cheese. Pour broth evenly over mixture and sprinkle with remaining salt, cover with foil. Bake at 350 minutes for 45 minutes, uncover and bake 30 minutes until lightly browned and potatoes are tender.
