4 to 6 hours Dutch Oven or stew pot
2 cups hominy
8 cups water
1 pork roast diced
1 can green chiles chopped
4 cloves garlic
2 Tbl cumin
2 Tbl salt
3 Tbl cilantro
1/2 cup lime juice
3 Tbl chili powder
1 onion diced

Simmer lime hominy in water until it just begins to break apart, about 2 hours. Brown pork with onions, add to hominy. Mash together garlic, salt, cumin, cilantro and chili powder until it forms a thick paste, add lime juice. Add half of this spice mixture to the hominy, reserve the rest for later. Simmer covered until pork is tender, about another 1.5 hours adding more water as needed. Add remaining spices and cook 30 minutes more.
