Cheezy Polenta

1 cup cornmeal
4 cups water boiling
1 cup cheese different varieties
salt & pepper to taste

Bring water to a boil, slowly add cornmeal, stirring constantly. When mixture begins to thicken stir in cheese a little at a time until all is incorporated. Season to taste. Serve as is, or allow to set and bake or fry.
