Mediterranean Chicken

1 hour 425 F Cast Iron Ridged Skillet
4 6 oz chicken breasts
to taste salt & pepper
1 1/2 tsp thyme
5 cloves garlic pressed
1 1/2 tsp basil
1 1/2 tsp oregano
3-5 Tbl olive oil
1 fresh oranges
1 fresh lemon
8 oz mushrooms sliced
1 package Sun Dried Tomatoes
1 small can Black Olives chopped
1 small onion sliced
1/2 cup Cooking Sherry

In a small bowl combine salt, pepper, thyme, basil, oregano, pressed garlic and 2-3 Tbl olive oil and mix into a thin paste. Coat the chicken breasts on all sides with mixture and place in cast iron skillet. Squeeze the juice of one orange over the chicken breast. Surround the chicken with the sliced mushrooms and place slices of onions on top of mushrooms and chicken. Place 3-5 sun dried tomatoes on top of each breast and top with the chopped black olives. Pour the cooking sherry over all ingredients and drizzle olive oil over the black olives, tomatoes and chicken. Place lemon slices on top of breast and cover with aluminum foil. Bake about 1 hour or until the thickest part of the chicken breast reach 180 F. Remove aluminum foil and bake an additional 10-20 minutes.
