450 Degrees Baking Stone
1 tsp Yeast
2 1/2 cups water ~ 90 degrees
2 1/2 cups wheat flour
1 Tbl salt
1 Tbl olive oil
2 1/2 to 3 1/2 cups flour

Raise the yeast using the sponge method: In a large bowl combine the yeast and water, mix well. Add the wheat flour a cup at a time and stir until smooth and silky. Let raise, covered, 1 hour. Sprinkle salt over top of sponge and stir in olive oil. Mix in flour 1 cup at a time until dough is too stiff to stir. Turn out and knead for 8 to 10 minutes until smooth and elastic. Place in an oiled bowl, let raise until doubled. Preheat oven and baking stone to 450 degrees. Divide dough into 2 inch balls. Roll out into 8 to 9 inch circles less than 1/4 inch thick. Stack between waxed paper, keep covered until ready to bake. Bake a few at a time ~ 5 minutes each, until it is puffed up like a balloon. Remove and cool, covered with a towel.
