Chicken Piccata

1 Onion chopped
2 cloves garlic crushed
4 green onions chopped
2 tbls olive oil
8 chicken breasts pounded
1/2 cup flour
salt & pepper to taste
2 tbls butter
2 tbls sherry
2 tbls lemon juice
1 Tbl capers
2 tbls chicken stock
8 lemon slices
2 tbls parsley chopped

Sauté onion, garlic and green onions in oil until tender, remove from pan and set aside. Mix flour, salt and pepper in flat bowl. Pound chicken breasts and dredge in flour. Brown in Butter, 2-3 min per side. Add onions and garlic. Over high heat add sherry, lemon juice and capers, and chicken stock if mixture is too thick. Garnish with lemon slices and parsley
