Sauce (Dip )

Hollandaise Sauce

Double Boiler
1/2 cup butter cold
4 Tbl lemon juice
4 egg yolks
4 Tbl water
1 tsp Crazy Salt

Whisk together egg yolks, lemon juice, water and crazy salt. Heat in a double boiler until thick, whisking constantly. Remove from heat and whisk in cold butter in 1 tbl chunks. Add more crazy salt to taste.
