Cheese Soufflé

1.5 hours 325 degrees Ungreased Soufflé Dish
4 Tbl butter melted
1/4 cup flour
1 1/4 cup milk
5 eggs separated
1 egg white
8 ounces cheese shredded

Melt butter in sauce pan, mix in flour and cook 1 minute. Mix in milk. Bring to boil stirring constantly, cook for 2 minutes. Stir in cheese a little at a time until all is incorporated. In another bowl lightly beat egg yolks and slowly add cheese until all is incorporated. Set aside to cool. Whip egg whites to stiff peaks, fold into cheese mixture 1/3 at a time. Pour into ungreased soufflé dish, bake at 325 degrees 55 to 60 minutes until knife inserted under top comes out clean.
