Preheat Oven to 375 Deep Pie Plate
Pastry
2 cups flour
1/2 Tbl salt
1/2 cup Olive Oil
1/2 cup water
Filling
2 1/2 cups Ricotta Cheese
3 eggs
6 Tbl Parmesan & Romano Cheese, mixed
nutmeg
salt & pepper
1 cup mortadella cubed
1 cup Salami cubed

Dough - Mix flour and salt gradually add oil until resembles coarse meal. Sprinkle with water and mix with fork until dough comes together, let rest covered 30 minutes. Filling - Beat ricotta. Beat in eggs. Mix in cheese and a few grates of nutmeg, salt and pepper. Fold in meat. Roll dough into top and bottom crust. And place in oiled pie plate. Fill with cheese mixture and cover with top crust. Make slices in crust for steam to escape and glaze with mixture of 1 egg yolk and 3/4 tsp olive oil. Bake 60 minutes until golden brown at 375. Serve with tomato sauce on the side.
