Mushroom Cream Gravy

2 Tbl butter
1 scallion minced
1 lb mushrooms sliced
2 Tbl butter
2 Tbl flour
1 1/2 cup water
2 cubes boullion
2 Tbl heavy whipping cream
1/2 tsp salt
1/4 tsp garlic salt

In large heavy skillet, melt 2 tbl butter, add scallions and mushrooms and sauté until mushrooms are dark and release liquid. Remove mushrooms with slotted spoon leaving as much liquid in pan as possible. Pour liquid in cup to reserve. In same skillet melt remaining butter and whisk in flour to form rue. Add mushroom liquid and whisk continually. Slowly add water and bouillon, whisk to dissolve. Add cream, salt & garlic and mushrooms, heat through. Serve over Shepherd s pie
