rinsed & sorted

Soak beans over night in a large pan, drain. Sauté onion in olive oil until translucent ~ 10 min. Stir in garlic,
chilies (use half for milder chili), and spices. Put beans in soup pot or crock pot and cover with chicken broth,
add seasonings. Bring to a boil, and simmer until beans are tender ~ 2hrs. Add broth as needed. Stir in
chicken or turkey. Top with cheese, salsa and or sour cream.
Faster method for beans - wash and boil for 3 minutes, let set 1 hour, proceed with recipe.
