Soup (Chili )

White Chili

1 lb small white beans rinsed & sorted
3 Tbl Olive Oil
1 large onion chopped
3 cloves garlic minced
8 ounce green chiles chopped
1 Tbl cumin
1 tsp oregano
pinch pepper
8-10 cups chicken broth
4 cups chicken or turkey, cooked
salt to taste
1 tsp cilantro
3/4 cup Monterey Jack Cheese or Mozzarella

Soak beans over night in a large pan, drain. Sauté onion in olive oil until translucent ~ 10 min. Stir in garlic, chilies (use half for milder chili), and spices. Put beans in soup pot or crock pot and cover with chicken broth, add seasonings. Bring to a boil, and simmer until beans are tender ~ 2hrs. Add broth as needed. Stir in chicken or turkey. Top with cheese, salsa and or sour cream. Faster method for beans - wash and boil for 3 minutes, let set 1 hour, proceed with recipe.
