Sausage Stuffing

1 lb Sausage cooked and drained
1 large onion chopped
1 cup celery chopped
1 1/4 tsp salt
3/4 tsp pepper
1 tsp basil
2 tsp poultry seasoning or sage
1/2 tsp oregano
2 tsp parsley
10 cups bread day old cubed
2 cups chicken broth
1 jar capers for Steve

Cook celery and onion in small amount of oil, or drained sausage grease, until translucent. Add to cooked sausage along with seasonings. Mix in bread crumbs. Gently pour broth over mixture stirring till moist, but not too wet. This will stuff a 12-14 LB turkey. Or you can bake it at 350 degrees covered until temperature probe reads 180 degrees, then remove cover and allow to brown, about 5 minutes.
