Baklava

1 1/2 hours Pre-heat oven to 375 12 x 8 3/4 x 2 Make simple syrup
1 package Filo/Phyllo sheets (1 lb)
1 1/2 lb butter rendered
Filling
1 tsp cinnamon
1/2 cup sugar
3 cups nuts chopped

Generously butter the bottom and sides of pan. Mix filling by hand. (To render butter: place butter in a small pan over low heat & slowly melt. DO NOT STIR! With metal spoon, gently spoon off all foam, until clear) Make simple syrup: Bring sugar and water to a rolling boil, boil for 1 minute. Take off heat and squeeze in lemon juice, then drop in lemon and stir, set aside to cool. Place 1/2 filo sheet in the pan. Butter the half that fits in pan, fold over the other half - butter top. Repeat. After using half the sheets (approximately 11) gently pack all of the nut mixture down. Repeat with the balance of the filo, repeating the fold, butter process. Cut the Baklava before baking by cutting 2 straight lines equally space the long way. Then slice through the filo at 45 degree angle to form diamond shape pieces. Bake at 375 degrees for 15 minutes. 325 degrees about 1 hour & 15 minutes or until golden brown. Pour cold syrup over HOT baklava after finished baking.
