Vanilla Tapioca Pudding

3 Tbl minute tapioca
1/3 cup sugar
2 cups milk
3 eggs separated
1 Tbl vanilla

Mix tapioca, 1/2 of sugar: mix with beaten egg yolks. Let stand 5 minutes. Cook, stirring until mixture comes to full boil. Remove, it will thicken as it cools. Beat egg whites until fluffy. Add rest of sugar, beat until stiff but not dry. Fold into cooled mixture, add vanilla.
