Sweet & Sour Pickles

8 quarts unpeeled pickles sliced
12 large onions
1/2 cup coarse salt
2 quarts vinegar
9 cups sugar
1/2 tsp powdered alum
1/4 cup mustard seed
2 Tbl celery seed
3 tsp turmeric

Slice fresh pickles (small cucumbers) paper thin. Sprinkle with course salt. Let stand 3 hours. Drain but do not wash. Add vinegar, sugar, alum, mustard seed, celery seed and turmeric. Bring to a boil. Put hot pickles in sterilized pint jars (still hot) Wipe rim clean and put on sealing lid. Makes about 12 pints.
