Arroz con Pollo

4 chicken thighs 1 per person
3 Tbl Olive Oil
salt and pepper
1 cup long grain rice or pkg yellow rice
1/4 cup onion chopped
1/4 tsp garlic powder
16 ounce tomato sauce
1/2 tsp onion powder
1 tsp chicken bouillon
1 Tbl chili powder to taste
Carrots chopped
bell peppers chopped
Coat chicken with 2 tbl olive oil and sprinkle with salt and pepper. Bake in 400 degree oven until brown, don t
over cook.
In large skillet or multicooker toast rice in 1 tbl olive oil until lightly golden, 2 minutes. Add onion, carrots and
bell peppers and saute until soft. Stir in spices and allow to bloom 30 seconds then add tomato sauce. Nestle
chicken into sauce and allow to cook until rice is desired tenderness.
