Egg White Bites

20 minutes 325 Cupcake tin
8 egg whites
5 Tbl cottage cheese
1/4 cup mild white cheese Jalapeno melting cheese
1 Tbl salty hard cheese Asiago or Feta
1 Tbl butter
1 tsp corn starch
bell peppers chopped
green onions chopped
2 dash Tabasco If not using jalapeno melting cheese

Preheat oven to 325 degrees. Process everything except peppers and onions in a blender or food processor until well mixed. Add peppers and onions and pulse a few times to chop and combine. Spray cupcake tin with cooking spray and pour 1/2 cup of mixture into each slot. Bake 20 minutes until puffy and lightly brown on top. They will collapse quickly when they come out of the oven but they are still good.
