Broiled Pork Tenderloin

325 disposable aluminum roas
2 1 pound Pork Tenderloins tied
2 tsp kosher salt
1 1/4 tsp oil
1/2 tsp pepper
1/4 tsp baking soda

Set top oven rack 4 to 5 inches from broiler. Preheat oven to 325. Fold in the small ends of the tenderloins and tie every two inches to maintain shape. Mix together soda, salt and pepper. Add oil to make a paste and rub over tenderloins. Place in disposable baking pan. Turn on broiler and place pan on top rack. Broil 5 minutes, turn tenderloins and broil another 8 to 14 minutes until it reaches an internal temperature of 130 degrees. Remove from oven and cover with aluminum foil, allow to rest for 10 minutes. Slice 1/2 inch thick and enjoy!
