Lady Fingers

3 large eggs separated
1/4 tsp cream of tarter
1/4 cup sugar to mix in egg whites
1/3 cup sugar to mix in egg yolks
1/2 tsp vanilla
3 tbls flour
3/4 Tbl water
1/4 tsp baking powder
1 pinch salt
powdered sugar

In a bowl, beat egg whites and cream of tarter until foamy. Gradually add 1/4 cup sugar, beating on high until stiff glossy peaks form and suger is disolved. About 6 minutes. Set egg whites aside. In another bowl, beat egg yolks with 1/3 cup sugar for 3 minutes or until thick and lemon colored, stir in water and vanilla. Combine flour, baking powder and salt, sift into yolk mixture. Stir until just combined. Fold into egg whites. Using a pastry bag with a #12 round tip, pipe 3 1/2 inch long lines about 2 inches apart on parchment paper or greased and floured baking sheet. Bake at 350 for 10-12 minutes or until lightly browned. Remove to wire rack and cool completly. Dust with powdered sugar.
