Devil s Food Cake

350 degrees
9 inch cake pans
2 1/4 cups all purpose flour
1/2 cup cocoa powder Unsweetened
1 1/2 tsp baking soda
1 tsp salt
1/2 cup shortening
1 cup sugar
1 tsp vanilla
3 egg yolks
1 1/3 cups cold water
3 egg whites
3/4 cup sugar
Grease and flour cake pans.
Sift together flour, cocoa powder, baking soda and salt. In large mixing bowl beat shortening on medium for
30 seconds to soften, add 1 cup sugar and vanilla. Beat until fluffy. Beat in egg yolks one at a time taking one
minute each to incorportate. Reduce speed to low and alternate water and dry ingredients until just
incorporated.
Beat egg whites to soft peaks, gradually add 3/4 cup sugar. Beat to stiff peaks. Fold egg whites into batter.
Combine well. Divide among cake pans, making sure they are even.
Bake 30-35 minutes until cake tester comes out clean. Cool 10 minutes in pan then turn onto rack to cool
completely before frosting.
