Stir & Drop Lemon Cookies

8 - 10 minutes Pre-heat oven to 400 cookie sheet
2 eggs
2/3 cup vegetable oil
2 tsp vanilla
1 tsp lemon rind
3/4 cup sugar
2 cups flour sifted
2 tsp baking powder
1/2 tsp salt

Heat oven to 400 degrees. You do not need a mixer to make these fast easy cookies. Beat eggs with fork until well blended. Stir in oil, vanilla and lemon rind (I use the boughten type). Blend in sugar until mixture thickens. Sift together flour, baking powder & salt. Stir into oil mixture. Drop by teaspoonful 2 inch apart on ungreased baking sheet. FLATTEN WITH GREASED BOTTOM OF WATER GLASS DIPPED IN SUGAR. Bake 8 - 10 minutes until delicately brown. Remove immediately from baking sheet.
