Side Dish (Vegetable )

Cabbage - Sauteed

1 onion sliced thin
1 Tbl Olive Oil
1 lb cabbage sliced thin
1 Tbl Olive Oil
salt and pepper
1/4 cup fresh parsley 1 Tbl dried
2 Tbl lemon juice

Soak Cabbage in cold water - 3 minutes, drain well! In skillet with lid sautee onions in 1 TBL oil, seasoned with salt and pepper, until soft and lightly browned about 6 minutes. Remove to bowl Add 1 Tbl oil to skillet and add all of drained cabbage. Sprinkle with salt and pepper but do not stir. Put lid on skillet and allow to cook until wilted, about 3 minutes. Pour off any liquid using lid to keep cabbage in pan. Top with onions and cook uncovered until cabbage is browned on bottom, Do Not Stir! When Cabbage is desired color, sprinkle parsley and lemon juice over onions and toss into cabbage. Serve
