Sformato - Italian Souffle

20 minutes 325 degrees cupcake tin
8 eggs
1 tsp salt
1/8 tsp pepper
6 Tbl butter
6 Tbl flour
1 1/2 cups half and half
1 1/2 cups milk
1/8 tsp garlic powder
3 ounce cheese shredded

Preheat oven to 325 and spray two cupcake tins with baking spray. Beat eggs with salt and pepper and set aside. Make a roux by melting butter over medium heat in a large sauce pan, add flour and whisk to combine. Cook 1 to 2 mintues more to remove raw flavor in flour. Add half and half and cream and whisk to remove lumps. Whisk in garlic powder and continue stirring until it starts steaming. Whisk in Cheese until combined. Very slowly pour into egg mixture while whisking to temper the eggs. As you add more you can pour more quickly. Pour into cupcake tins 3/4 full. Bake 20 minutes until the center is 180 degrees. Remove and allow to cool, they will fall. Garnish and serve.
