Quiche - Basic Recipe

45 minutes 425 Pie plate
1 pie crust blind baked
3 large eggs beaten
1 cup heavy whipping cream
1/4 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg ground
2 cups filling ingredients

Blind bake the pie crust by pricking the crust with a fork and baking at 425 degrees for 15 minutes. Lower oven temp to 325. You can also use pie weights like beans to keep it from bubbling. Do this first and set aside to cool. Saute your filling ingredients and spread in the bottom of the crust. Beat the eggs and whisk in the cream with salt, pepper and nutmeg. Pour over the filling and bake for 35 to 40 minutes until the center is 160 to 165 degrees (it will still be wobbly). Allow to rest 15 mintues before cutting.
