Tomato Sauce

1/2 cup onions chopped
1/2 cup Carrots sliced thin
1/2 cup celery sliced thin
2 Tbl Olive Oil
2 cloves garlic pressed
1 handfull basil crushed
1 handfull oregano crushed
1 handfull parsley crushed
30 ounces crushed tomatoes
1/4 cup red wine
salt and pepper

Saute the onions, carrots and celery in oil until almost soft, remove from heat and stir in garlic and herbs. Add crushed tomatoes and wine (use the wine to rinse the can) and return to medium heat until hot through. Taste by dunking in really good bread, correct the seasonings and have some more bread.
