Bread (Rolls and Dumplings )

Fluffy Dinner Rolls

4 hours Preheat 375 Degrees Cupcake Tin
1/2 cup water
3 Tbl bread flour
1/2 cup milk
1 large egg
8 ounces bread flour
3 ounces whole wheat flour sifted
1 1/2 tsp yeast
2 Tbl sugar
1 Tbl salt
4 Tbl butter softened
1 Tbl butter melted

Whisk together 1/2 cup water and 3 Tbl flour in a microwave safe bowl until smooth. Microwave in 20 second intervals, whisking inbetween, until forms a paste that mounds when dropped from the whisk. Transfer to large mixer bowl and whisk in milk until smooth. Add egg and whisk until thouroughly combined. Sift the wheat flour and reserve the bran. Mix flours and yeast into the milk egg mixture with a fork to combine. Mix with dough hook until all flour is moistened. Let sit for 15 minutes. Add sugar and salt and knead with dough hook for 5 minutes. Knead in softened butter 1 Tbl at a time, for 5 minutes. Pour onto lightly floured surface and form into a ball. Place in lightly greased bowl, cover with plastic wrap and allow to rise until doubled, 1 hour. Punch down and divide into 12 balls. Flatten each ball into a 3 in x 8 in rectangle and roll into a cylinder. For Clover Rolls, Cut each cylinder in three pieces and roll each piece into a ball. Place three balls in each cup of a lightly greased cupcake pan.Spritz with water and sprinkle with reserved bran. Let rise until doubled, 1 hour. Preheat oven to 375 degrees. Bake 25 minutes or until golden brown. Cool in pan 3 minutes. Invert onto cooling rack, set upright and brush with melted butter. Let cool 20 mintues.
