Welsh Rarebit

2 Tbl butter
2 Tbl flour
1 tsp brown mustard
1 tsp Worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
1/2 cup Guinness
3/4 cup heavy whipping cream
8 ounce cheddar cheese
hot sauce to taste
rye bread toasted
In a sauce pan over low heat melt butter, whisk in flour and cook for 2 to 3 minutes, do not brown. Add
mustard, worchestershire sauce, salt and pepper mix to combine. Whisk in beer then cream. Add cheese and
whisk to slowly incorporate. Serve over Rye Toast.
